Lotus root is a crunchy root vegetable widely used in Asian cuisine. When sliced, it has a beautiful natural pattern with little holes — and in this treat, those holes are carefully filled with ground chicken breast before being slowly air-dried.

As it dries, the chicken and lotus root bond together, creating a layered texture: the chicken brings rich, savoury protein, while the lotus root adds a gentle crunch and a naturally fibrous bite.
